Cornbread

Ingredients

  • 1 1/2 c. flour
  • 1 c. cornmeal
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 T. ground flax, optional
  • 2 eggs
  • 1/2 c. vegetable oil
  • 1 1/2 c. milk
  • 1 c. corn kernels, fresh, frozen (thawed), or canned (drained) - optional

Directions

  1. Preheat oven to 400 degrees F.
  2. Combine dry ingredients and set aside.
  3. In a separate bowl, beat eggs.
  4. Add oil and milk to eggs and mix well.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Fold in corn kernels, if using.
  7. Pour batter into a greased 9x13 inch baking dish.
  8. Bake for 17-20 minutes; don't let it turn brown, but make sure it's not jiggly.
